This is a tough one! I list personal favorites. Games i share something with.

Final Fantasy VI
Planescape Torment ( just because of the incredible AWESOME story )
Quake 2
Double Dragon ( when i was a kid, this kid was my best friend. He had 2 older brothers who were into gaming. So i grew up with all the classics. I spend many many hours on DD, Wolvenstein, Doom, etc )
UNiVERSAL
I always like the complexity of SimCity

b.cl4y
Diablo II (worse than crack)

Doom III (scary as hell)

Counter-Strike (worse than heorin)
st3nc

razmataz
Monkey Island 1, 2
Space Quest
Police Quest 1, 2, 3

But my all time favourite:

Indiana Jones and the Fate of Atlantis. I get goosebumps of nostalgia every time I see that game. They dont make computer games like they used to-sigh.

Day of the Tentacle was cool. The new one though (1994?). There was an 80s version that I didnt like very much. Sam and Max. and I forgot to mention Full Throttle. A bit easy but instant classic! :)

IMO, unfortunately, there's really not much quest games nowdays. Lucas Arts has been making Jedi games lately.
