Sour strawberry jam

| Everytime I make some strawberry jam, the taste turns out to be too sour. Is it because I'm using too little sugar? Is that lemon drops hint true? |

Sometimes Lira, a dash of lemon with a spot 'o honey will add a suculent, very exotic, sort of tender tangy taste to those "oh so-so bland" Jams.

| One time i tried blending strawberry jam with some Grape jelly and peanut butter. It was good and yummy for about 5 mins, then my stomage started to rumble...Apparently the jam, jelly and peanut butter were brawling in my belly. I quickly ran to the bathroom and stopped the fight...Im never gonna mix those 3 again. |

2 qts. strawberries
1 package pectin
7 C. sugar
Wash and take the tops off the berries. Crush the berries, one layer at a time. Measure 4 1/2 C. berries and put them in a pan. Add pectin and place over high heat. Stir until mixture comes to a rolling boil. Add the sugar and return to the boil. Boil hard 1 more minute, stirring constantly. Let set 5 minutes and remove foam from top.
Ladle into hot sterilized jars. Process in a hot water bath for 10 minutes.
Yield: 4 pints
