(1) Transform a video into audio? OR
(2) Record the audio from the video into an mp3?
You can't do (1), since one is a audiovisual format and the other is a audio format only. I can help with (2) though.
But post more details of what you're trying to do.

Okay, the way that I normally do it is to use a sound editor, something like wavelab or Creative Recorder (came with my soundcard).
I can then set to record the output from the mixer (the software mixer) and I start recording, then press play on the vid and the sound from the vid is recorded. Just stop recording when the vid finishes playing. Not the most elegant solution, but it works.
Remember though that the sound will be recorded as a .wav file and will thus be about 10MB a minute (I think that's about right). You'll have to convert to .mp3 afterwards. If you're not sure on that, just yell.
If you have any other issues or questions, just reply and I'll (or the other TAs) will try and help.
