I love instrumental scores....
Arbiter
The Rock and The Last of the Mohicans come to mind.

and Psycho.
Cal
Solaris and Blade Runner have amazing soundtracks.

The Village and Lost in Translation have soundtracks that fit the mood of the movies perfect.

Not one person mentioned Batman (1989)?!!!! Danny Elfman kicks ass when it comes to musical scores for movies. Beetlejuice was awesome too. ;)
