It's effectively the "Death Blossom" of Photoshop techniques - the, "2nd Death Star Explosion" if you will.

I'm not sure I remember exactly....I know the font was included with PS and I think I just free-handed the stroke and then used the history brush tool to remove it over the letters.
Since I can't remember exactly, here are some awesome Sumo videos:
