if you watch the 9 short clips of Animatrix, you'll watch a who's who in japanimation (ninja scroll, cowboy bebop, aeon flux, akira, vampire hunter etc...)
but besides the aforementioned there are a few standard classics that must be watched
- Princess Mononoke
- Akira
- Ghost in the Shell (inspiration for the Matrix)
etc
and the two most criticalliy acclaimed series of anime?
1. Neon Genesis Evangelion
26 episodes, starts off kind of fruity, but near the 2nd half of the series, the character's pyschosis becomes richly developed, and by the end the series becomes epic in scope and vision. awesome.
2. cowboy bebop
watanabe brings his own vision of anime with jazz pop musical influences that are choreographed with the action.

Here is a little vid of the sheer awsomeness that Hellsing is !
I own this and watch it about once every 6 months. It's tremendous.
There was also a short series on Spike network about 3 months ago that was extremely well done. Samuel Jackson was poorly used as an annoying sidekick to the main character.....Afro Samurai.
One of the greatest anime movies is "Grave of the Fireflies" if you have not seen it check it out.

It's not actually Anime. It's done sort of in that style, but it's American. Much better than the movie, which was a letdown for me. My expectations were so high. Carrie-Ann Moss should have played the part.
