Here's what I'll be making tonight;
This is my own home-made recipee. It started out as just pasta with chicken, but I've been refining it every time and taking notes, so far it's coming along nicely. That means I'm open to suggestions if you have any.
Funky Chicken Alfredo pasta
-3 cups of raw pasta (I like to use shells or rigatoni because I'm anti-conventional)
-2 chicken breasts, cut to thin slices (like you'd do for a salad)
-1 cup of fresh brocoli
-fresh mushrooms (I use about half of those little packs you find at the grocery store, but really just go by feel)
-alfredo sauce (I won't go into the details of preparing alfredo sauce for the sake of shortening this post, but any recipee will do, and you should have approximately 400ml, though I'm not 100% sure about the exact quantity seeing as some of the milk evaporates during cooking)
-2 large tomatoes (or 3 smaller ones)
-salt
-pepper (any kind will do)
-parsley
-fresh basil (dry will do but fresh is better)
-Olive oil
Start by chopping tomatoes, brocoli and mushrooms into very small cubes. Mix together (except the tomatoes, keep those seperate) and cook lightly in a small pan. Meanwhile chop the chicken and cook in a seperate pan with a few drops of olive oil. I usually make sure all of the above is done because getting started on the pasta, because you'll have your hands full with that and the sauce, and trying to multitask too much will make you screw something up. Afterwards, prepare the pasta and sauce. After the pasta is rinced, immediately put the sauce in and mix. Then add the brocoli/shrooms, then the raw tomatoes, chicken, salt/pepper/spices, mix and serve. |
