Newbie Logic/Kontakt3 questions

Hi everyone,

I'm hoping someone here can help me out, because I have a few problems with Logic. I've been a Sonar user for a few years, and have recently switched 100% over to Mac which includes moving over to Logic. So far, I've found it to be a very positive experience and have been able to figure out most aspects for myself, however there are a few things that haven't proved so clear, and I was hoping that someone could just set me straight. I think it might be hard for me to explain (english is not my first language), so please bare with me...

1) When I use a AU like, say, Kontakt 3...I create a new 'Software Instrument' track from the arrangement window. I select 'Kontakt 3' from the input menu on that track, and I'm able to use that instrument. What I want to know is, what is the correct way to manage outputs and arrangements for an AU? In Sonar, I'd be able to create as many midi channels as I want and point them to an instance of Kontakt, so I could basically seperate different elements of a multi (hats, breaks, stabs etc) to make it easy to sequence. I cannot see how to do this in Logic, however. When using Kontakt, how do you do it? Ideally, I'd like to have several midi channels on the arrangement window all controlling a single instance of Kontakt, with the audio routed to, say, four stereo outs.

2) On the subject of Kontakt, how get it to allow me to use more than two stereo outs? When I create the AU, a select the '8x Stereo' option, but when I choose an output from within Kontakt it only allows me to choose between two stereo outs and a 5.1 output. I've looked through the Kontakt 3 manual and watched to tutorial videos and i'm still none the wiser, and i'm tearing my hair out!
