I just formatted my mac pro, everything is now running so quick (especially on a 2x250gb RAID0 setup)

Yes, and it only has real world benefits with throughput when you start scaling in larger arrays. No real benefit is seen till 4+ drives. Especially since MOST desktop RAID implementations are software based. |
