I've got a bucnh of frozen beef stock I made the other week I'm thinking of giving it a go... but don't really know what i'm going to do with it once i've made the consomme.

i have never done it that way, but it is a cool tip indeed.
i usually just leave broth in the fridge overnight and pour it through a tight mesh colander to get the fat off. Almost the same thing, but not quite the same.
The thing i have really wanted to try is using hydrogen to quick freeze foods and create new textures, but i'm not set up for that yet. They sell a machine for it, and aparently you can make awesome "crispy" salads and deserts with it. Maybe this christmas i'll ask santa for one. |

Yeah gelatin filtration is supposed to get it ultra clear as well. Pity it gets rid of the gelatin in the stock tho imo

Hydrogen eh? sounds fancy.. I've been thinkgin about putting together some kind of ghetto sous vide setup and ing around with it. |

And yeah, I used to be into magic. I can still do some pretty insane card tricks and flourishes but haven't practiced in a long time. :p |
