surround sound and "3D" sound and Binaural beats...

Hello,
does anybody use any form of 3D surround sound processing
in production?
I searched the forums here but nothing showed up.
For example, i recently noticed that Logic has a binaural
processor plug-in per channel. The type where you can drag
a blob around 360 degrees of a persons head giving the ability to
position a sound.
Today i listened to some really impressive 3D music recordings.
The depth and lush soundscape that was created seemed excellent.
They were done using binaural techniques and probably dedicated
software.
I know these days it's all about surround 5.1 or 7.1 but i was
more interested in creating just 3D sound that works over standard stereo headphones.
I am curiuos if anybody has touched on this subject in their endevours/work.
I already know of productions that use this kind of approach and they sound superb...but it's not totally revealed as to how they are achieving
these results.
Dolby digital performance audio. This is a bit of a grey area for me.
Apparently Dolby has the ability to take stereo recordings
and expand everything into 7.1 tru surround sound. This 7.1 signal will sound great over a 7.1 speaker system, however Dolby also appear to be able to make that same 7.1 signal then be phsycoacoustically treated in reverse. The signal then also sounds like 7.1 surround sound over regular stereo headphones.

I just wanted to let the forum know about some great
new software tool for recording sound in 3D.
Longcat Audio
the tool is called "Audiostage"
There is a free stereo version of the tool!
It appears to be a high end tool.
I found a video of a demonstration of how it works
with 3D audio.

People say they have been looking for a tool like this for
a long time.
It is real simple to use.
You can basically mix sound real easily in 3D.
I can imagine the possibilities with trance music.
