Cooking Spices, oils, other things you like to use

BECAUSE YOU!
This thread isn't about food you made, cause nobody cares...but what we do care (as a collective) is what are some of the spices and oils, sauces you use.
i need ideas...i can't keep putting sesame oil on everything and call myself a genius.
btw.
sesame oil with soybean oil = the best to put on ANYTHING if you like subtle awesome.

saffron is amazing
also, I've been using coconut oil in my rice for the past little while and it's ing awesome. I've also made coconut pancakes with coconut milk fried in coconut oil. ing yum. |

I cook with Olive oil.
Herbs are wonderful, I don't understand why people don't use them more often. I don't cook/eat red meat so I'm not sure what harmonizes that. But for poultry I love using Sage, Parsley, Coriander and Rosemary.
For fish; Salmon + Dill or Chives is the bomb diggity, I make that often. Otherwise Parley and/or Coriander works with pretty much anything. If you don't use Lemon on your fishies, get out of the ing kitchen.
I also add garlic and onions to pretty much everything.
Spices make all the difference, Egyptians were buried with their spices, I think Cumin (Shut up, Stu) is the one I'm taking with me. But I love nearly all of them, they're all useful if you know wtf you're doing.
Favorite Sauces: Harisa, Sriracha and Maille Dijon mustard. |

| I often make chicken curry with Seeds of Change curry sauce over rice. It's good stuff, but I could use some other ideas for sauces for chicken and rice. |

Pesto sauce, you can make it yourself - Basil, Parmigiano-Reggiano cheese, Pine nuts, Garlic and Olive oil.
Or Beurre Blanc (Butter sauce) - Saute some Shallots in white wine, add in lemon juice, cream and butter.. Make the sauce in the same pan you used for the chicken, it's more flavorful (and less dishes to do). |

Tomato sauce if it's Italian, Dashi+Soy sauce if it's Japanese.
Less is more.
