I have been djing in clubs for over 20 years and I can tell you that there is no hard and fast answer. Depends totally on the processing the club has.

Most I play in these days are stereo. That said, when you produce a track you should have the understanding that there are so many different ways that people enjoy music and you should strive to give your listener base as enjoyable experience as possible.

Some of the responses here are so way off its unreal.

As long as your mix is balanced and you don't use stereo imaging to excess you should be fine.

If you want to check your track then get a stereo widener and turn it down to zero. You will notice that pads do less well in mono but that is true for all. The art of getting it rightin mono is to ensure that your core components stay in tact.

A lot of musical detail can get lost in a club anyway and volume will change things.

You might also want to check out some commercial tracks just to get a feel for how mono affects those tracks too.

stick to LCR panning as much as you can, bottom end mono and double check that nothing is completely out of phase.

the details would not be heard by the average impaired dancer. There will be enough reflections to simulate a pseudo sense of envelopment.

Aim for the crowd that will buy your music, ie ipod. Stereo and how it will change your music at least how one will perceive it is rather minimal.
