If it was just that, then I've seen videos of Armin twisting the shit out of those knobs while I kept rewinding the video to hear the effect it actually had on the music, which, as far as i could tell, was none.
One way I caught a DJ is through the tracklistings of the set. I remember listening to a John B set, and really appreciating the way he layered two tracks when he mixed out of one into another. Then I listened to another set, and he did the EXACT SAME THING in it. Of course it could be argued that he just knows how to do it that well live. I dunno.
The cynical part of me would say that it also depends on how big of a gimmick the DJ is. The bigger the gimmick, the less surprised I would be if the music came second to his gimmicks, and thus was pre-recorded.
