Because it's a sentence. The whole damn thing neglects to note that it all depends on posting a sentence or a paragraph. It's not that if you just keep the 1st and last letter the same, it works, it's that our minds work to put together the pieces of the puzzle that are missing and complete the word that would most likely go in the blank while at the same time estimating that the letters we see scrambled would match.
It's not that "letters can be a total mess and you can still figure out what the word would be," that's not true at all. It's a dumb internet ploy on something that could be interesting to think about but instead that everyone ooh's and aah's over without thinking about it. Sorry, grammar/linguistics/language get me riled up.
It's very hard to do with singled-out words, and words that are more difficult/rare than the ones in the original paragraph.

it's completely obvious that context is needed regardless. it is needed in a word, between the letters - especially the first and that last, as i hope i demonstrated above - aswell as in a sentence, between the words. |
