It'll be weighed by the evidence room staff, people have to sign in whenever they go into that department with a list of times and who was on site at the time, security cameras everywhere. Add to that internal affairs type departments who are paid to find out if your dodgy. It's literally impossible.
Providing everyone is corrupt in the evidence room, including senior officers and detectives, you'll be able to get away with it but thats rare.
I remember years ago some cops in Northampton, got arrested it turned out they'd nicked a large sum of drugs over the years finally they got caught out.
