Easiest Healthy Meals to Make

So I'm in college, I've got a stove/oven, a microwave, and a few pots n pans.
But I don't know how to cook.
And I have no imagination/am picky when it comes to food.
And I'm kinda broke.
And I'm trying to eat healthy (lots of protein, moderate amount of carbs, low fat).
Any help? Post your tastiest, easiest, most healthy meals that you use on the reg. |

| Yes! I eat tuna sometimes but its usually tuna-fish sandwhiches. But I've never tried that, good start |

Just stock up on chicken and turkey breasts and get yourself some fresh herbs (rosemary, basil, thyme are my personal staples), and mix things up with your marinades. I make fresh chicken caesar salads all the time with my own dressing (because it's healthier).
Recipe for dressing is really easy:
2 cloves garlic
2 egg yolks
2 anchovy filets OR 4 tsp anchovy paste (anchovy paste keeps longer!)
2 tbsp capers
2 tbsp worchesterchire sauce
1-2 juiced lemons (acid to oil ratio should be 1/3 acid to 2/3 so be careful with the lemon juice)
1 cup olive oil
2 tsp dijon mustard
salt + pepper to taste
That makes about 1 1/2 cups of dressing...which is a lot if you're not planning to use it right away. Gotta remember there's raw egg in there so it won't be good for much longer than 3-4 days. But yeah you can cut that recipe in half. Once you make it a few times you'll know how to play around with your measurements and stuff.
I always marinate and grill or broil my chicken a day or two ahead of time and just refrigerate it. I don't have time to do that every ing night cause I'm so busy...but doing it ahead of time is the pwn.
Something else I make when I want a healthy snack is lettuce wraps. Use some iceberg or bib lettuce as the shell, and put some shaved turkey breast and a few slices of your favorite cheese, and a little bit of mayo or mustard in there...roll it up and you're good to go.
Can't go wrong with protein shakes. You can make oatmeal pancakes with a scoop of protein powder in them as well, and that's pretty tasty, though the texture leaves something to be desired. Just use the same amount of oats you'd use for a serving of hot cereal, 3 egg whites, and a scoop of protein powder...blend that and make your pancakes.
Oh, and eggs ftw. Scrambled, hard boiled, omelets, any time of day ftw.
Salmon is another easy one. I prefer the filets with the skin left on because the fat makes it tastier. Just season it with some salt + pepper, throw some minced garlic on it, add some fresh dill, a squeeze of lemon juice, a couple slices of lemon on top and a little bit of butter...wrap it up in tin foil and bake it in the oven.
Oh, I also like Kashi Go Lean cereal in the morning. About 1/2 to 1 cup with a few tablespoons of vanilla yogurt and 7-8 almonds is ing so good. |

Oh yes! Parmesan! Forgot about that! The dressing NEEDS parmesan.
And it's not a big deal to include fat in your diet, especially if you're doing the high protein/low carb thing. Your body NEEDS fat...just make sure you're not overdoing it.
Oh also, peanut butter...though it is a fairly good source of protein, counts as a serving of FAT. So if you're gonna be eating it, don't use more than a tablespoon. Even that's pushing it. |

-Marinated chicken breasts (cut that up into small pieces)
-Green/red peppers (chop that up into dices)
-Onion
-Little bits of tomatoes and/or white button shrooms
-Rice
Start by cooking the chicken in a pan, then cook veggies with a little drop of olive oil, add spices (I like to use thyme/parsley/basil), add a very little bit of sauce for subtle taste (either stir fry, soy or anything sweet), mix in the chicken, add the rice last and mix that up.
Alternatively you can use fish instead of chicken.
Takes maybe 20 minutes if you time it correctly. |

| I can give you my recipe for chicken soup if you want. Make a bunch and freeze it, you'll have enough for a month. Not much better for you than some tasty chicken soup!! |
