Practice and vast knowledge of mixing tools and arrangement techniques will make anybody a Pro, but it takes lots of time depending on how hard you try. Of course no one can be a pro without at least some knowledge in music theory and sound design, the more complex you like to produce the more you need those two. Also you have to have the right equipment, not just expensive high end gear but the right tools for your application and you need to know your tools inside out. One last thing you need in order to be a pro is a goal; Why do you want to be a Pro? Wanting to become a pro in itself is not a goal!
These are just my humble opinion, fell free to disagree.

still tho, why are there so many threads going about how inadequate people are feeling about their own skillz?

surely professional implies a technical ability to make a living off of your work, not as much the sound you produce...

that's just called skill.
if you're skilled and you make a living off of that skill THAT's a professional person in their field (aka echo*)...
