Ingredients:
1/2 pound thin-sliced bacon
1/4 cup grated Parmesan cheese
1 box (4.4 ounces) garlic breadsticks
Preparation:
Preheat oven to 425 F. Place a metal baking rack inside a shallow 10 x 15-inch baking tray.
Slice each bacon strip in half lengthwise and sprinkle one side with grated Parmesan cheese. Wrap the bacon strips spirally around each breadstick and place on horizontal to the wires on the baking rack so they don't fall through.
Bake 12 to 15 minutes, until bacon is cooked. Sprinkle hot bacon-wrapped breadsticks with additional Parmesan cheese. Let cool before serving.
Yield: about 8 appetizer servings

Hot Bacon Dressing
Ingredients:
4 strips bacon, diced
1 hard-cooked egg, separated
1/4 cup half-and-half or cream
1/3 cup vinegar
1 teaspoon granulated sugar
1/2 teaspoon dry mustard
1/4 teaspoon garlic salt
1/4 teaspoon mixed salad herbs; basil, tarragon, parsley, chives, etc.
salt and pepper to taste
Preparation:
Cook the diced bacon until crispy. In a saucepan, combine 2 tablespoons of bacon drippings, the mashed hard-cooked egg yolk, cream, vinegar, sugar, mustard, garlic salt, and herbs. Add salt and pepper to taste. Add finely chopped egg white and bacon then heat mixture through. Cool slightly then pour over mixed greens, spinach, or lettuce.
Cheese and Bacon Cornbread
Ingredients:
1 package corn muffin mix (i.e., Jiffy)
1/2 cup grated sharp Cheddar cheese
6 slices crisply cooked and crumbled bacon
1 egg
milk, as label directs
Preparation:
Empty corn muffin mix into a medium mixing bowl. Save about 1 tablespoon of shredded cheese and bacon for topping; stir remaining cheese and bacon into muffin mix. Mis in egg and milk, following label directions. Pour batter into a greased and floured 8-inch square baking dish. Bake at 400° for 15 minutes; sprinkle reserved cheese and bacon over top and bake 10 minutes longer, or until cornbread browned and firm.

Recently my bacon addiction has reached new levels.
I have now made my own bacon!!!!
10 pounds of it!!!!!
It all started with a slab of raw pork belly that I cured.
Then smoked
To perfection
And turned into this glorious finished product.
The pictures don't do it justice. Homemade applewood smoked bacon beats the piss out of the store bought stuff.
I honestly don't know if I'll ever buy bacon from the grocery store for home use ever again after this.
Anyone else makin their own bacon?
