Technically they can be trained to smell anything but usually it's just the big 3, weed, heroin and coke.

It's more a psychological thing, the dogs will smell just about anything you put in front of them. What they really smell is the fear oh some kid ting his pants thinking they got a mark on him. The trick it to just act like it's some dumb dog on the street coming to smell your crotch cause you have some gum in your pocket and ignore it, the cops just pull them back. Cop isn't watching the dog, they're watching you and how you react.

This, the dogs sense pheromones that you release while being nervous, scared, running etc.

a long time ago had a sobering experience at JFK--
wAiting for my suitcase a usda inspe tor with beagle was walking about
when he came within about 20 feet dog just made a beeline towards me and went right for my carry on
had to unpack everything including some allowed wrapped food items
of course i had nothing imoermissible at all.
inspe tor and i tAlked a bit , the likely cause for the hit must have been an apple i had in the case about 1 month before this.
needless to say id never even think about smuggling stuff past these dogs
