I've been tasked with the salad and mac and cheese, not the out of the box crap. I want to do an upscale baked panco crust dream. Googling recipes as we speak.

I love mac and cheese especially from whole foods.

You mean at the food bar? When I'm bad I put a scoop of it with my salad. :eyespop:

Btw I know enough that dealing with real cheese melted can be tricky to get the proper consistency. That's why they put all that junk in the powered stuff.

You have to make a bechamel.

I made some dope mac n cheese a few months ago. Actually fried up 4 kinds of mushrooms and mixed it in there. For the cheese I used Gruyere, Reggiano and Cheddar I believe.

Recipe calls for Gruyere. Never had it sounds interesting. What's it taste like?
Adam420
kinda sweet and nutty. Definitely one of my favorites. Try to find the Gruyere Des Grottes (cave aged) for extra flavor.

But the thing is if you are making mac n cheese you want to use a few different kinds with each lending their own property. That's why I also used Reggiano (for the saltiness) and Cheddar (for body/filler).

Thx I'll try that. I was like ho hum mac n cheese. Never thought it be such an adventure
