My 2 uncles are coming to visit my mom and me tonight (one of them I haven’t seen since I was 14) and they are bringing a bunch of fresh yellow snapper they caught while deep sea fishing over the weekend and I think I’m going to get stuck cooking for everyone, which I don’t mind, but I’m not that experienced with fish. I should probably bake it instead of grill it just to be safe, right?
What should I do?? |

lol
actually when my other uncle used to live in the bahamas, we would go snorkling and spear fishing and we'd catch fresh snapper and eat it raw with wasabi and soy sauce while chilling on his sailboat smoking weed and drinking wine. |

first you gotta clean it if it's not already done....clean as in descale it, cut the fins, gut the stomach, etc
Cooking wise, depends on what you want to eat. I've always been a fan of boiling fish but make sure you have a pot large enough to set it in such that it's not crammed. Leaves a much desired fluffy fish texture, would go nice with a lemon zest or lemon reduction sauce over it.
or you could cut it up or filet it and do as you wish from there on in. it really depends on what other dishes you plan on complimenting it with. |

If it's not previously frozen, steam it and prepare it Cantonese style. It's simple, taste great even for non-fish lovers.

Otherwise, you can pan sear both sides to lock in the flavor and then bake it. Look in epicurious for recipes. |

im sure my uncle gutted and cleaned it. he's a fisherman/yacht captain...he wouldn't leave that part up to me:p
i'm thinking more like making some sort of breading out butter and ritz crackers and baking it with some lemon and parsley?
serve with steamed brocolli and baked sweet potatoes? |
