Fresh fish, and potatoes. Fried yes but if it's from a decent place (no pun) then it won't be greasy the batter should be dry, chips should be dry.
The oil forms a crust layer on the food which blocks the oil from soaking into the food.
Plus it'll be vegtable oil not fat it is boiled in. |
