How do I eat smart on a budget? I'm wasting money here.. and starving (pg. 5)

garlic chicken breasts with brown sugar...

this is easy and very good

Tbs oil
6 or more garlic cloves, minced
1 Tbs brown sugar
3 boneless skinless chicken breasts

Preheat the oven to 500F.

Heat the oil over medium heat, add the minced garlic and cook slowly, stirring constantly, until softened. Make sure the oil is not too hot. You don't want to brown the garlic and it can get to that point quickly if you're not careful.

Take it off the heat after 5 minutes or so and add the brown sugar and stir it in.

Line a shallow roasting pan with foil and spread oil across the foil. Lay your boneless skinless chicken breasts across it, spread the garlic/oil/brown sugar mix across the chicken. Bake for 15 minutes, or until done.

if you're the lazy type or you're always busy and don't want to be caught having to cook at the last minute make some big batches in advance and freeze!


You could do stuff like lasagna or whatever and buy a bunch of glad ware or whatever is cheapest and put it in all the different containers and freeze for later use.

campbells soups (the kind that come in the microwavable bowl with the red lids) they are $1 a piece and one can of tomato soup fills me up.

sandwiches...pb&j is good, but for more versatility get like...bread, mayo, mustard, variety lunchmeat pack, pickles and sliced cheese. it all costs like $8 and it makes like 12 sandwiches or more.

banquet dinners. these things have saved my life. 89¢ per meal @ HEB. i recommend the country fried chicken, the fish sticks, and the meat lasagne.

frozen bagged chicken nuggets and french fries...good for lunch, pretty cheap...lasts a while.

mac n cheese, pasta, and oatmeal are also some of my fave staples.

ALSO... if you already have mayo (for the sandwiches) pick up some celery and some canned shredded chicken.

this is my famous chicken salad, and it's easy.
open can of chicken, drain it, and cook it in a skillet til it's not pink anymore...you should be able to tell when it's done.
put it in a bowl. add some mayo (not too much... maybe like 2/3 tablespoons)
slice up a stalk of celery and slice up a pickle. add salt and pepper.
mix it up with a spoon.
bam. best chicken salad ever. eat on a sammich or just by itself.

you can also do tuna instead of chicken. it's really really cheap and good :)

Yes!!!


i find the most versatile form of food is a red sauce. we always have a tub, yes TUB of red sauce in our refrigerator. Pour it over:

-roasted potatoes (olive oil, cilantro, a little lemon, onions, garlic, chives, pep. salt, to taste)
-pasta
-bagette, chibbata, sourdough, pita etc. fresh breads, then top off w/ grated cheese of choice and rosemary.
- any type of rice that you can buy in bulk is also so versatile and cheap

red sauce recipe:

if you can find heirloom tomatoes (genetically unaltered) use those! if not, i suggest about 14 large tomatoes plus at least a bag of cherry tomatoes for a subtle sweetness. red bell pepper can be blended as well.

anyways,

1) blend all tomatoes/red bells in a blender first
2) put blended tomatoes in extra large pan on stove, on high heat
(this sauce is a sort of reduction. the sauce should be at high heat for about an hour. you'll notice that for that hour, there will be lots and lots of foam. you don't want that foam. when almost done, you'll have noticed that the sauce has reduced itself almost in half. there should be no more foam and no white boil bubbles, therefore being a sort of reduction. the sauce will no longer be soupy, but thick and full. you'll notice a much more potent, fresh taste.
2. within that hour, you would to lightly satay onions and lots and lots of garlic in about 1c. of olive oil
3. i don't eat much meat, but if you'd like.. shrimp and salmon give the sauce an extra rich taste. add these to the olive oil, onions and garlic.
4. in the tomato reduction, add:

cayenne (lots!)
curry
chive
salt
pepper
beef/chicken boullion cubes
onion powder
garlic salt
thyme

all to your taste.

5) pour in satay of olive oil, onions, garlic, and any meat of your choice

6) reduce heat to medium

WA Lah! the longer you let the sauce absorb the olive oiled onions and garlic + meats, the more rich the taste. tonight, for example... i let it all heat together for about another 30 min. just taste everything in the process and tweek everything to what you like.

- i used about 20 tomatoes, + one bag of cherry grape tomatoes. it'll last 2 weeks+ easily. and i douse it on everything.. almost everyday :wtf:

Wow, and I thought I had an unhealthy diet. Some of you college students put me to shame (even compared to when I was in college).

-Grilled chicken breasts
-Hamburgers (Forman grilled to drip off excess fat, most other beef is pricey)
-Salmon and other cheaper fish
-Pasta
-Rice dishes (see Lipton's Rice Pilaf, Uncle Ben's Flavorful Rice, etc. and also Lipton's Pasta sides)
-Grilled Cheese Sandwiches
-Portobello Mushroom caps

Lastly, go to the deli and make sandwiches for lunch.

Meats are going to be your costliest ingredient, so if you're really scraping by, try to limit how often you eat large portions of meat.
