Do you know where in Japan you'll be teaching?
Invest in a Japan Rail tourist pass before you leave. They are like a EuroRail pass, meaning that they run for 7, 15 or whatever CONSECUTIVE days once they're started. Keep it in your pocket until you have some travel time saved up. It'll save you time & money. You can hop on / off the Shinkansen bullet trains without any problems, and it gets you access to the Tokyo above-ground light rail/subway system. The Yamanote (green) line is the best one to familiarize yourself with. Most of the good spots can be accessed from there (Shibuya etc.).
Oh, if you're into clubbing, you must hit a party at Womb. It's unreal.
Also, Yoshinoya is great 24 hour eats. Bigass orange signs.
I visited there a few years ago and it was beautiful. Two weeks wasn't nearly enough time.

I've applied to go to 1) Miyazaki, 2) Kyoto, 3) Akita, but I won't actually be finding out for another month or so.

Nice.
Kyoto was beautiful, but I only spent an afternoon there. I don't recognize the other city names.
