I may end up sounding bitter or worse when I mention this, but... it seems like a bunch of you guys may be, in a way, in anti-magnificence denial. Some of them may be awesome DJs and such, but they fake it all the time.
The truth is, so many of your favourite star-class DJs will once in a while make their multi-city tours a little easier by pre-recording sets that they know are solid enough for the venues they know well. Doing DJ booth theatrics is a) easy ; b) fun ; c) easier when drunk or tired.
There's no harm in understanding that they do it. There IS harm in continuing to tear apart every DJ's methods until all the magic that makes DJing awesome before you knew anything about it, gets destroyed by our destructive nature. The hard and striving careers of all the DJs and artists we know and love should keep some secrets... it's ll part of what makes em so cool to see when they visit town.
Imagine if you knew as a very young child HOW Santa Clause could get to every house in the world in 1 night? If somebody told you he clones himself for every 1,000 houses he needs to visit, would you feel as special waking up and openning those presents the next morning?

If it was just that, then I've seen videos of Armin twisting the out of those knobs while I kept rewinding the video to hear the effect it actually had on the music, which, as far as i could tell, was none.
One way I caught a DJ is through the tracklistings of the set. I remember listening to a John B set, and really appreciating the way he layered two tracks when he mixed out of one into another. Then I listened to another set, and he did the EXACT SAME THING in it. Of course it could be argued that he just knows how to do it that well live. I dunno.
The cynical part of me would say that it also depends on how big of a gimmick the DJ is. The bigger the gimmick, the less surprised I would be if the music came second to his gimmicks, and thus was pre-recorded.
