I have a portable recorder that I use for capturing ambient noise. I've never used any ambient / crowd / street noise in a complete track yet, though.
It can actually sound pretty neat if you go inside a crowded building that's pretty "spacious" or reflects sound in some interesting way, then take your recording and put a bunch of reverb on it and / or apply filters to it.

Now that I live so close to a large city I actually have a lot more opportunities to record interesting ambient noise, but I haven't been taking advantage of it lately.

Would you have a problem with a (hypothetical) person telling you that he/she MOSTLY listens to Techno (starting giving names like Maurizio, Taho, Basic Channel, Luomo, Carl Craig and others...), in the same way you would have a problem with another person informing you that he/she MOSTLY listens to Epic Trance (starting saying names like Above and Beyond, Push, Paul Van Dyk, Airwave, Ayla and stuff)? I think there is much more variety of composition and sound in 'techno', a huge umbrella term, than in 'epic trance', so it's apples and oranges here.
i think derrick may is the techno priest, cyber cleric would be thomas melchior and baby ford, and dub bishop would be moritz von oswald
