I've always found it a little ironic that my two preferred genres of music are jazz and electronic music. One emphasizes improvisation and more swing with things a little bit off-beat, while the other is the complete opposite and emphasizes pre-recorded and planned structure/perfection. In fact, it's probably safe to say that I like it more than dance music.
The fifties and sixties, in my opinion, produced some of the best music. Many names have already been mentioned, I'm sure, but standouts for me are Miles Davis, Nina Simone, Dave Brubeck, John Coltrane and Louis Armstrong. I tend to struggle to enjoy a lot of modern day jazz, as much of it seems to be "perfected" in the mix-down process; everything seems to be quantized, and it feels like there's a significant lack of swing and soul in a lot of what's coming out today.
Anywho, here are some of my favorites, off the top of my head...

A ton of electronic music is improvised and not perfectly quantized. A ton of detroit techno is session based music. Many artists also record many sessions and stitch the sessions together to form a tapestry or a final 'version' from the recordings. Also, plenty of jazz has very dominant structures, with improvisation providing more of an embellishment or variation on the theme. In its inception, I don't think electronic music is a 'pre-recorded' or 'planned' music, but because technology makes it easy to cop out in that way for the sake of a formula that guarantees easy success, many tend to take that road.
I can't stand the overproduced, highly structured, generic electronic dance music. Even worse is that kind of overproduced, highly structured, generic electronic dance music that appropriates jazz, soul, or otehrwise 'ethnic' samples for mere flavor. (aka 98% of all so called 'tech house' that comes out)
