Water, vinegar, and sugar is all you need for the base, I assume. I'm sure you can throw in some garlic, a little red wine or something, and you'd be on the right track. I just don't want the sauce to be too thin or too bland. |
do what you want it is the essence of cooking afterall. if you do add wine or chicken broth it counts as a water portion. the balanced sauce like they make it in my fav chinatown restaurant (where this recipe comes from btw) is equal parts sugar, equal parts vinegar (acid), equal parts liquid (water in this case).
i'm not a chemist, but this chemistry is important for the consistency and the "bite" that you are looking for. |

| Just wanted to say I had a huge, delicious bowl of Pho last night with a ton of Sriracha in it. I dunno if you're supposed to put it in the soup, but I ing love it. |

siracha is so good that i have toyed with the idea of adding it to my special k cereal in the morning.
i'm worse than a nubian when it comes to hot sauce and kool aid. |

| It's funny, I used to hate spicy food. Only recently I realized nearly everything I get is spicy as , and I just continue loading on mouth scorching sauces. |

You're not, but I did that for years too (been eating pho for about 10 years now). You are just supposed to dip the meats in it. |

| i love tabasco too, and believe it or not you can make a great salad dressing with it. (goes great with grilled chicken or tuna). |
