Personally medium or sometimes medium well when eating out, as a rule most places will undercook by 1 grade cos it's easier for them to add a bit more than take away.
I always remember the night my brother came in from work as a waiter during his A-levels and was laughing his head off. Turns out a guys instructions were to "cut it's tail off, wipe it's arse and bring it out" |

not true if you buy quality beef.;)
most of the ecoli comes from being ground in the same grinders as chicken and pork. Certified meat from a quality butcher you will not have this problem, i've eaten steak tartare many times and have never been sick.
supermarket meat you deffo want to cook all of the way, most of that stuff is half frozen, half fresh and processed in plants. no thanks.
i refuse to buy meat from supermarkets (well not true, i find costco has some really choice stuff at great prices sometimes.) <3 my butcher. |

Very true, but you have to take a hit in the price as far as meat is concerned if you go to a butcher. I'd say most ground beef at places like Kroger, where the butcher is right next to the meat section, you'd be safe with a medium or medium rare burger. It would make me sad if they ground up all that beef in the same place they grind turkey and chicken.
You get deals from markets because the beef is a little lower quality but not so low that you can't cook it a little less to get the full flavor of the meat :toothless |
