Has no one mentioned pho, yet? Sweet nectar of the gods, that stuff. I generally love Asian soups. In addition to pho, I also really love various Japanese and Cambodian soups.
Pea and Ham is definitely my favorite "Western-staple" soup. Lentil soup and chicken noddle soup aren't bad. |

| I have tad of Russian blood in me so I love borsch soup and a bit of Aussieness simply caught on, I eat borsch with a meatpie :D |

Selma makes the most delightful broccoli potato soup. It's easily my favourite soup in all the land.
And so, so easy:
-peel potatoes
-dice potatoes into pot
-chop onions, broccoli, jalapenos/habaneros, cumin, paprika, salt, pepper into pot
-add water and bring to a slow boil for maybe 30 mins
-add chopped cilantro
-add the secret ingredient
-boil for another 15-20 mins
-when everything is tender, ladle it into a blender and puree until desired consistency.
So simple, healthy, and delicious. Though each time I make it, it's just a little off. Truly more than the sum of its ingredients. |
