When we were in Jamaica...one of the buffets had a jerk stand, with 3 different types of jerk sauce. I tried the "mildest" one and was spitting fire out my ass all day the next day. I did not put any sauce on my chicken any of the days after that. :/
edit: the stuff we have is called 'First Love' Carribean hot sauce. Soooo good!

i have always found that west indie hot sauces are so flavorful, but can cause a bad case of flaming the next day lol. there is a company in vermont that makes hand made organic hot sauces (the only place i know to buy them is from this little sandwich shop in lake placid called saranac sourdough) but they make a habanero and jalapeno based sauce that is amazing. |

Those are awesome. They just opened one in Rochester. Is it the kind where the waiters walk around with big spears of meat that they slice pieces off for you? |
