I agree that substitutions may be understood as insulting to some chef/restaurateurs and I understand why. It is one thing to change something because of allergies or other type of intolerance, and in that case, a 'light' substitution may be acceptable to adapt to the circumstances. On the other hand, if the person just does it because of likes and dislikes then I think it is just bad. |

| so does this make me a bitch for asking for a fan whenever i stay at someone's house? i mean i am so used to sleeping with a fan that it's hard to do without it... but am i being rude by not giving the ambiance of their house a chance? |
