is disgusting, and i refuse to eat it. It is the quintessential food, right up there with hot dogs.
this however :
Curried Macaroni and Cheese
* 1/2 cup butter
* 1 teaspoon vegetable oil
* 1/2 red onion, diced
* 2 clove garlic, diced
* 1 green chili, split lengthwise and kept in one piece (optional)
* 1 tablespoon curry powder
* 1/4 cup plus 2 tbsp all-purpose flour
* 5 cups 2% milk
* 2-1/2 cups provolone cheese (or any mild cheese, like mozzarella), grated
* 1-1/4 lb macaroni, cooked according to package directions
* 1/2 cup breadcrumbs
* 1 bunch asparagus, bottoms trimmed
* salt
Directions
1. Preheat oven to 350F.
2. In a large pot, heat butter and oil over medium heat.
3. Add onions, garlic and green chili, sauté until tender, approximately 2 minutes.
4. Add curry powder and flour to create a roux, whisk to remove lumps and cook flour, approximately 1 minute.
5. Add milk slowly while whisking to create a curried creamy sauce over low heat.
6. Bring sauce to a simmer, continue to whisk for 2 minutes.
7. Remove from heat, remove green chili, add 2 cups of grated cheese and stir.
8. Add macaroni to curry sauce, mix and season with salt.
9. Transfer macaroni mixture into a 9x9 baking dish.
10. Sprinkle top with ¼ cup of breadcrumbs and ¼ cup of cheese.
11. Arrange asparagus in a line over breadcrumbs and cheese.
12. Sprinkle remaining breadcrumbs and cheese over top, bake in oven for 30-40 minutes, until top is golden brown.
will make you wish that you never bothered with the box caca. |

| there are some quality cheddars that come in orange, but generally the orange stuff is of the lowest quality, and it is only that colour because of added food colouring so that people who eat at macdonalds can understand what it is. |

| Box pasta is gross, it is only about 1 step removed from paper mache and fresh pasta really isn't that much more expensive or harder to cook. Unless your idea of 5 minutes in boiling water comes under the category of being too complicated. |

| I am generally not a big fan of adding a large number of superfluous ingredients as in the recipe Jay provided (though I can't comment on the merits of that particular variant). That said: proper, oven-prepared macaroni and cheese so far surpasses those prepackaged alternatives that it makes them look really bad by comparison. |
