Medium, sometimes medium-well. As soon as the center has started to lose its pinkness is when I like it. |

OMG the centre has started to lose its pinkness? You might as well say "as soon as the centre has started to lose all it's juicy goodness and finally doesn't taste like beef, but like some grey piece of crap."
Seriously anything beyond medium-rare/medium - the chef will poop in your steak! |

same reason I never order fillet. I'll take a chewier meat (sirloin) that has soooo much more taste, and just add the stuff i eat it with, usually a salad, and it's perfect |

yeah i rarely order steak at restaurants though..i always go for Lamb over steak. If i order steak it's dry aged beef. My favorite meat besides lamb is Ostrich and Venison. |

It's not that common as a meat even down here. I know they do export it to the US tho. A good exotic meats seller should have roo fillets. Here's one I found: http://www.exoticmeats.com/store/index.php?cPath=24_50 |
