I guess every single cooking show and every single recipe I've ever come across is wrong then. I've never heard of NOT seasoning meat. That's ing stupid. Remind me not to eat at your house with your bland meat and whatnot. :o

You shouldn't salt it down before you cook it. Although it of course depends on how you're going to prepare things.

If you are baking/broiling your steak, don't salt it before because it will have sufficient time to dessicate things a bit. Whereas if you're grilling, you have enough heat to seal the outside of the meat in before it starts to affect things too much.

Pepper I just don't know about. I'd rather have everything else on my plate be peppered before my steak, if I'm really finnicky about getting it on there somewhere.

I disagree and think you're wrong.

Alright do whatever you like! Make dioramas for deer-watching for all I care!

Just promise me you're using kosher salt. :o :o

I've heard seasoning steak with salt too much before you cook it draws the moisture or "juices" out of the steak which might not necessarily make it less flavorful, but dries it out a bit and makes it less tender. I salt steak before I cook it, but only a very little bit.

The don't salt meat before cooking is a myth of sorts. What you aren't supposed to do to meat is salt too early (unless its slow cooked brisket or butt or a similar cut that gets cooked for a long time.) If you want the meat to brown properly you have pat the meat to remove excess moisture on the surface, so the time to season is right after this step right before putting it on the grill/pan/broiler.

If you season your steak and let it sit there for more than 5 minutes it won't be as good.

Supermarket quality steak absolutely needs seasoning. With a properly dry aged prime cut of meat you should need very little or none.

That being said I'm going for sushi.
