If you're having it well done, you don't deserve to have more than 1.5 cm thick. Otherwise its a waste of meat.

and it's ok to have well done steak, it just needs to be cut very thin and marinated heavily.

It's because bacteria breed on the surface of a steak, but ground beef has no 'seal' to keep the bacteria on the surface, so it breeds throughout the entire collection of ground beef. There's like a million times more surface area on a 8oz collection of ground beef vs a 8oz steak cut.

Another reason that well-done steaks tend to suck is that most chef's have absolutely 0 respect for anyone who orders them, and will often go out of their way to ensure that it's NOT an enjoyable experience for the fool who ordered it.

I've seen more than one well-done steak on the grill with 6 Nella pans stacked on top of it to speed up the cooking process and squeeze every last ounce of delicious out of it. People who order steaks well-done have no business ordering a steak in the first place. Any more than medium all but guarantees that your steak is going to suck.
