why does my chicken parm always come out bland tasting? it's like the breading just tastes like bread and oil. i guess i have to put A LOT of salt in the bread crumbs/flour?
my sauce came out the bomb though. one of my best batches.
tomato sauce/paste/crushed tomatoes
olive oil
vidalia onion
garlic
fresh basil
red wine
brown sugar
salt/pepper
roasted garlic for some extra flavor

the key is in the breadcrumbs,
add some parmesan and parsley |

oregano > parsley.
but yes you need cheese.
you also need to make sure the oil is hot enough or it soaks into the crumbs making it taste like slylee cooked it:p |

the chicken itself came out perfectly cooked. i just followed a recipe i grabbed online real quick. dip chicken breasts in flour that is seasoned with salt and pepper. then dip in egg wash, then dip in regular ol' breadcrumbs in that container:sadgreen: then i cooked in olive oil 5 min on each side then baked in oven with cheese & sauce on it.
i think i made real breadcrumbs one time out of 2 day old french bread loaf and it was better.
so add parm cheese in the crumbs and then also use real bread crumbs?

home made breadcrumbs > ones bought on a supermarket shelf
as for the cheese its something my family does and im sure many other european families :)
edit- there is also garlic added at the crumb stage too |

I find if you salt and pepper the chicken before putting on the bread crumbs it brings out the flavor. you can also add Pecorino Romano cheese to the bread crumbs. Fresh herbs to the sauce is a must.
I picked up some tenderloin on sale today, 1/2 off, and had it for dinner. I couldn't help think of Slylee and her Kobe steak. :p |
