I made a Manicotti Ole!
It is ground chicken with salsa and black beans stuffed inside manicotti.
Then I did a blackbean/salsa over the pasta with cheese of course.
Dessert I did a Peach Crisp which is so yummy. The topping is made of oats, sugar, cinnamon (lil oil and 2 tbsp of water to make it all clumpy) and the inside is blanched peaches with some flour to hold it semi-together.
It taste like a thin peach pie and the top part is all crunchy and tastes like crunchy granola (after its baked):)

(i don't grill on the 4th cuz I live in an apt and we don't eat red meat.. what fun is grilling with no hamburgers *tear* oh how i miss thee* |

i'm so happy right now. i decided to face my fears with cooking lamb and went to Whole Foods and got a few racks of lamb. the meat guy was eyeing me and gave me a funny look when he handed me the lamb all packaged up. i just said thanks and smiled.
i realized when i was paying that he totally hooked it up and charged me for pork sausages instead which were only 5.99/lb instead of the 16.99/lb i was ready to pay for the lamb. my total bill there was 30 bucks and i got other stuff too. i would have paid more than 30 if he had charged me the right price for the lamb.
it pays to be a cute chick sometimes:D
so yea i'm gonna do roasted rack of lamb tonight with a raspberry sauce. mashed potatoes & asparagus on the side. pics to come:o |

I cooked my first meal tonight for my sister, dad, and step mom (I have a kitchen now!). I surprised myself and my family haha! I made chicken cordon bleu with buttered garlic noodles and garlic bread.
It was amazing and i wasn't eating by myself! (Ahem Will)

the noodles and the bread looks good. the corbon blue .
oh, and congrats on moving in with your family, instead of, you know, like out by yourself 
i keed i keed. the food does look good though.
i had steak tonight; marinated in olive oil, and crap load of spices. was good. |

stuffed chicken for a first meal is tough. i suck at stuffing meat. lol
here's my rack of lamb with rasberry dijon sauce over mashed potatoes and steamed asparagus with lemon & butter. i cannot even begin to tell you how ing delicious this meal turned out. i would feel confident feeding it to a top chef from food network tv:o

i totally winged the raspberry sauce. i used raspberry jelly, honey mustard salad dressing, red wine, a little olive oil & balsamic vinegar too. it was great. the juice from the lamb meat combined with traces of the raspberry sauce on top of the mashed potatoes was ing WIN. |

You kidding me dude that chicken cordon bleu was phenomenal! My dad took the leftovers home!
Yeah i moved in with my sister living with parents. I made my dad come over haha.
Oh and slylee i beat the meat (haha) and rolled it, much easier. |
