As per Jay's request. Really simple and delicious baked salmon with an onion dill rub and lemon caper dressing.

I just eyed everything out, as I was only cooking for one. For the rub you need:

fresh chopped dill
finely minced red onion
a good dash of lemon pepper salt

Rub this all over the salmon and then give it a good drizzle of olive oil. Wrap in tin foil and bake in a 400 degree oven for 20 minutes give or take. Depends on the size/thickness of the filet.


For the dressing you need:

about a tablespoon of capers
a third a cup of olive oil
teaspoon or so of dijon mustard
lemon juice to taste (I guess I used 3-4 tablespoons?)

That's just rough...I did it to taste...all depends how acidic you like your dressing. I put some dill in it as well.


When the salmon is done drizzle it with the dressing, add some chives or green onion and done!


I've put a similar dressing on salads with canned salmon or tuna before as well. Is tasty and fresh.

also i bought awesome dry rub spice at winners yesterday.

they are a bit pricy, but i can't wait to grill for the first time this year tommorow.

I'm very light with mayo and honey mustard. Not on the parm though haha. Also melt the cheese on the chicken first :p

Oh btw, I just tried a new marinade for pork chops.


Dijon mustard, worchesterchire sauce, lemon juice, olive oil, garlic, salt + pepper.

I used a similar marinade for shrimp the other night, lol.


Can't wait to see how this tastes tomorrow.
