There are quite a few types of Salmon up here...but this type is no good after it freezes. I cut up most of them and put them in brine overnight (brown sugar - salt - ginger - garlic - johnny walker - and a few other things) and this morning I am smoking them to make some jerky out of it. Not all salmon is pale:

I prefer salmon that are from salt water and haven't been in fresh water streams much. But seriously... there are so many good ways to cook it. That red salmon from above was cooked this way:
Soaked a cedar plank for 3 hours in saltwater and vermouth. For the salmon... mixed up brown sugar - soy sauce and sesame oil to spread on it. For each steak - cut 4 slices across the grain - about half deep. Stuff that with fresh ginger and freshly minced garlic. Throw on some green onions on top of that and then grill for 15 minutes. It would blow you mind how good that tastes... there is no hint of any fish... just smooth, smokey, silky deliciousness. |
