300gm bag of shredded cheese
1 large onion, diced very fine
All into a (deep) baking dish or casserole bowl, except the cheese, mix it through all together, don't bother cooking the chicken separately.
About every 20-30mins mix in a few handfuls of cheese and stir it all through.
For the last 30mins run the oven up to about 180degrees and make sure it's all thoroughly cooked though, leave it a little longer if you have too, stirring every now and then. It's not an exact science.
I'm going to serve this over plain, boiled white rice, Honey Rabbit is having salad with hers :)

I also like to add a bit of grated chilli and garlic in there for a bit of gentle warmth. It's also one of those things which is sometimes best left in the fridge overnight to let the flavours soak through and then just reheat the next day.

Sort of thinking, if you where to be really adventurous a little bit of diced pineapple (and maybe a tensy bit of mango) in there to give it a slightly sweet, broader taste.
Hindsight also says there's too much cheese and it makes it a bit oily, I'll halve it next time |
