Meh, go to Sicily if you want a proper wood fire cooked pizza, NY is kind of close but not quite as it usually has way too much cheese.
I busted out the old-school cooking this afternoon before running off to the beach. Basically I had two really huge pork chops, I don't know why I bought them, but I think I just bought them because they looked really cool at the butchers. About 3cm thick and take up half a dinner plate and not very useful for much unless you sort of want to cut it in half which sort of destroys the point of having a porkchop that big :D
But anyyyhooow...
2 humongous pork chops or leg cuts of lamb or beef will work ok
2 brown onions
2 tablespoons of finely chopped garlic
Half tablespoon of chopped chilli
Half tablespoon of coriander
Some honey
Tablespoon of olive oil
Baking tray
Aluminium foil
Heat up the oven to about 150-160degrees Celcius, don't know what that is in that other archaic measurement and frankly I don't care.
Chop up the onions fairly thick and your garlic, oil in the bottom of the tray, you don't want too much there, just enough to smear the sides and bottom.
Chuck the onions and garlic in there, mix in the coriander and chilli with it and then blend in a good dollop of the honey
Smear the chops in there and mix it all around until it's goo everywhere over them.
Get a little bit oil on your finger and smear it around the top of the baking tray and then put over a layer of tin foil and make sure its really airtight as you can (shiny side in noob) and then a 2nd layer over the top of that.
Leave it in there for about 3hrs
After 3hrs, turn it over and leave it there for another hour uncovered
By the time its done the house will smell soooooo oooooh, the meat will literally melt off the bone it will be that tender.
Make gravy with the onion-garlic slop at the bottom after draining the top layer of oil off it.
I served it with mashed pumpkin carrots and peas, though if you want, put in some potatoes, parsnips or carrot in there for the last hour.
